Tester dishes

Does anyone else have tester dishes, which you order at lots of tavernas as a test of how good they are?

Ours are moussaka and (especially) melitzanasalata - if they get these right, they are usually good tavernas. If they make them with special care and a bit of flair, the place in question is usually excellent.

Beef stifado has to have sweet small onions and cloves - taramasalata that isn't pink - cremated lamb chops, these are our tests and we swear by them!
