my first thought is no, its too far for a comfortable day but i suppose it's possible

plakias to hania,  2 1/2 hours (?) hania to elefonissi 1 1/2 hours, these are rough estimates, others may have more accurate times.

there are a few tavernas with rooms there and (probably ) more in Eloi

it's a beautiful place but you just make the effort and go to the dunes near the headland

when you get out of the car park, it's all sunbeds and kids but the further you walk out the better it gets

pink and black sand.......

It is a very nice place but for me it would be too far from Plakias even overnight. Better to book a holiday to Paliochora and visit from there.

One option (involving two nights away) is to go to Chora Sfakion, take the ferry to Paleochora, stay overnight, do the day trip to Elafonissi by boat from Paleochora, stay ovrnight, then come back to Plakias by ferry again.

As DreamOfGreece says, it's not realistic to visit from Plakias.
